RECIPES: ALLERGY FREE PANCAKES

It was Shrove Tuesday this week which meant that pancake recipes were everywhere! You may be forgiven to think that if you are gluten free this means sitting back and watching others enjoy their fill; slowly feeling more and more depressed as your Instagram and Facebook feeds fill up with sugar, gluten, dairy and eggs.

Thankfully this doesn't have to be the case (okay, this post is a bit late for this year's pancake day).

Gluten free
Egg free
Dairy free
Sugar Free

Say whaaat?! Here are some more extra chocolatey ones (yep still sugar free):


The best bit? They don't taste like anything is missing - particularly the ones free from any normal pancake ingredients.

Enough of the teasing now, here are some recipes. For each one just fry a small amount in coconut oil or grass-fed butter and serve with whatever you fancy. I normally opt for apple, blueberries and Whole Earth peanut butter. PS. don't expect them to behave like normal crepe style pancakes!

PUMPKIN SPICE PANCAKES

  • 1/2 cup gluten free flour (coconut, chickpea, standard stuff...)
  • 2 tbsp unsweetened almond milk
  • 1/2 tsp pumpkin spice mix (see here)
  • 1/2 tsp xylitol
  • 1/4 tsp baking powder
  • 1/4 tsp salt
 Makes 4 pancakes = 84 cal, 11g carbs, 3g protein, 4g fat, 2g fibre, 0g sugar

DARK CHOCOLATE PROTEIN PANCAKES

  •  1 egg
  • 1 scoop chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 tbsp unsweetened almond milk
  • 1/4 cup oats
  • 1 tsp xylitol
  • 1 tsp baking powder
  • 1 tsp vanilla
  Makes 4 pancakes = 84cal, 7g carbs, 8g protein, 2g fat, 1g fibre, 1g sugar (from egg)
